Recipe Exchange - Traditional Swiss Zopf Bread, Chocolate Chip Cookie Truffles, and a GIVEAWAY!

Almost as much as I love Christmas traditions, I love Christmas treats!  I especially enjoy combining them - baking cherished recipes with my little ones every December.  Do you have a favorite holiday recipe?  As part of the Nestle Family Holiday Exchange we're participating in, they've encouraged me to share one of my family's special holiday recipes with you today (along with an awesome HOLIDAY BAKING GIVEAWAY - keep reading!).

Last night we started our 12 Days of Christmas Around the World, kicking it off with Christmas traditions from Switzerland because my husband's mother is native Swiss.  I was lucky enough to have this wonderful Swiss Bread (also known as Zopf) recipe taught to me while Brett and I were living just outside of Geneva during our first year of marriage.  I've made it every Christmas since and relish the thought of warm Zopf and hot cocoa on cold mornings!

ZOPF
(pronounced zup-fa)
 
4 cups flour
1 1/2 tsp salt
2 tsp sugar
4 tbs butter (melted)
1 1/4 cup milk (warm)
1 packet of yeast
1 egg yolk (beaten)

This is a great recipe to make with children because they love to get their hands in the dough (plus, you can practice math while doing your measuring - brainy bonus!). 
Combine dry ingredients & stir well, then add the milk & butter.  Kneed well - at least 15 minutes.  Cover and let rise for 2 hours (dough will double in size).  Then spilt dough into 2 equal part and roll them out into 2 long "snakes" about 2 inces thick. Lay them out criss-cross and follow the photos below to do the special Zopf braid, tucking the ends under at the bottom (I'm not gonna lie - it's a bit tricky!).
 
 
 Brush the top with the egg yolk.  Bake at 400 degrees F for 35-45 minutes until golden brown.
When it comes out, it's gonna look all gorgeous and taste even better.

Major YUM, right?  Here's how you can make them yourself! 
 
Nestle Toll House Chocolate Chip Cookie Truffles
 
1 pkg. of NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
1 3 pz. pkg. of cream cheese (room temperature)
1 cup of NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 tablespoon of vegetable shortening
1 tablespoon of NESTLÉ® TOLL HOUSE® Baking Cocoa, for dusting (optional)

First, prepare the cookies just like you would normally.  Let them cool, then blend them up into small bits in your food processor.  Add the cream cheese and process some more until the mixture starts to hold together.  Roll into 1 inch balls, drop onto a wax-papered cookie sheet and refridgerate for 1 hour.  Then  microwave chocolate morsels and shortening uncovered for 1 minute.  Stir together to make sure everything is melted.  Dip the balls into the melted chocolate with a fork, let the extra chocolate drip off and return them to the wax paper.  Lastly, let your kiddos sprinkle some sort of deliciousness on top!  The recipe suggests cocoa, which looks very pretty, but I think we're also going to try crushed candy canes, rainbow sprinkles or even some crushed Butterfingers.

My favorite recipe to make is called cake mix cookies. They're so easy. You just dump a cake mix, add 8 oz cool whip and 2 eggs. Stir everything together, then shape into balls and dip in powdered sugar to coat. bake at 350 for 5min.

My recipe this year was really simple.
Buy a sugar cookie mix from the store. Follow directions on package and add 1/2 cup coconut flakes (toast them if you'd like), 1/2 cup white chocolate chips and 1/3 cup of key lime juice. Mix well. They're great as thumbprints too (raspberry is best).

A favorite (and easy!), pretty holiday treat: Mini Brownie Kisses. Bake a family-size Fudge brownie mix in paper-lined mini muffin pans. While baking, unwrap a large bag of Hershey's Kisses (the swirls are the prettiest!). As soon as you pull the mini brownie bites out of the oven, press a Kiss on the top of each! Lovely little dessert!

All time favorite holiday recipe is Frozen Cherry Loaf.

1 16-oz. can dark sweet cherries
1 8-oz. can crushed pineapple
1 11-oz. can mandarin oranges
1 8-oz. pkg. cream cheese
1 c. sour cream
1/4 c. sugar
1/8 tsp salt
2 c. mini marshmallows
1/2 c. chopped walnuts

Drain fruit well. Let cream cheese stand at room temperature until soft. Beat cream cheese until fluffy and blend in sour cream, sugar and salt. Fold in fruits, marshmallows and nuts. Pour into loaf pan and freeze for six hours. Remove 1/2 hour before serving. Garnish with additional cherries.

Chocolate Peanut Butter Rice Krispie Treats
Bring 1 cup sugar and 1 cup corn syrup to a boil. Take off heat and add 1 cup peanut butter. Mix into 8 cups rice krispies. press into 9x13 pan. Melt 1 bag of choc chips and spread on top.

Our favorite is Fantasy Fudge
6 Cups Sugar
1 1/2 c butter
1 1/3 c evaporated milk
2 (12 oz) pakgs Nestle semi sweet chocolate chips
1 (13oz) jar KRAFT marshmallow creme
2 C chopped nuts
2 tsp vanilla

Combine sugar butter and milk in 5 qt pan. Bring to boil stir constantly. Boil 5 minutesover medium heat. Stir constantly. Remove from heat stir in chocolate nuts and vanilla. Beat until well blended. Pou in 2 greased 13X9 pans. Cool at room temperature cut into squares

It's not Christmas with out my mom's famous Watergate salad which includes a box of pistachio pudding, cool-whip, a can of cut pineapples and marshmallows. It's so easy just throw it all together in a big bowl mix it and let it cool for an hour or two. So simple and so yummy!

My favorite recipe for the holidays is Saltine Toffee. 1 pkg. saltine crackers, 1 stick butter, 1 c. brown sugar and package of chocolate chips. Place crackers on baking sheet, mix butter and brown sugar over heat until boiling and pour over crackers. Bake for 5 min. then pour over ch. chips! Yum!!

Banana Bread
This makes a quick and very moist banana bread which is great to bring to brunches

2 overripe frozen then thawed bananas smashed (we throw our overripe bananas in the freezer, so I almost always have some on hand)
2 not-necessarily overripe bananas diced
1/2 stick butter and generous scoop of homemade applesauce (or if you don't have applesauce in freezer--I always seem to have a ton of it b/c my mom makes it--then just up the butter to about 3/4 stick)
3/4 cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
chocolate chips

Mix it all up and don't be worried about it being lumpy so long as the flour is not in clumps.

Bake in buttered ceramic pan at 350. Remove from oven when toothpick comes out clean--note however, that you may have to insert toothpick multiple places as the chocolate and banana dices will be gooey even when completely baked.

We love stuffed mushrooms. Cream cheese, Bacon bits, bread crumbs, parmesan cheese, In the food processer I chop up garlic and green onions. mix all together then stuff in the mushrooms. bake for about 15 min at 350. So so yummy, you can also use any left over filling in celery.
